Another week gone by and Summer is marching on, we are still light here until about 10pm but it seems like yesterday that it was light about 20 hours out of 24 hours. It must be my advanced age that makes time seem to pass so quickly! Everybody must be going on holiday at the moment because I am doing a brisk trade in sunhats and don't have very many left now.
After all my talk about healthy eating over the past couple of days I thought I might share a recipe with you today. It comes highly recommended and they are lovely for handing round with drinks but I can tell you from personal experience that they are moreish and disappear fast. You can make them in a food processor so they are really quick and easy.
Cashew Nutters
3 oz Cheddar Cheese 4oz Soft Margarine (Olive spread would be slightly less naughty) 2oz Semolina 3 1/2 oz S.R. Flour Salt Freshly ground black pepper 1/2 Tsp. Dry mustard About 40 unsalted cashews halved or blanched almond halves.
1. Grate the cheese into the bowl with the grater attachment. 2. Fit the metal blade and add all the other ingredients apart from the nuts. Process until a soft dough forms. 3. Roll into about 40 small balls and press a nut into the centre of each one. 4. Bake at 350F or 180C /Gas mark 4 for 15-20 minutes until pale golden brown. Cool on a rack and store in an airtight tin.
NB They freeze quite well apparently although we never have any left to freeze! Enjoy!
